What Can You Do With Cooked Barley?
Normally, what do we do with the cooked barley after we’ve cooked a pot of barley drink? We either eat the barley together with the drink and some of us just throw away the cooked barley.
We can use these cooked barley to make “barley pancake”
My mum used to make for us last time for afternoon tea and I like it so much. If you want to try this out, you should separate your barley drink from the cooked barley first if you’re going to add sugar to your barley drink so that your ‘barley pancake’ doesn’t taste sweet.
Here are the simple ingredients you need – blended dried shrimps and finely chopped corianders. You can replace the corianders with spring onions if you like. As for the amount of these ingredients, it depends on the amount of the cooked barley you have.
I blended the dried shrimps slightly, you can, however, choose not to and use the whole dried shrimps. I feel that it tastes better if you don’t blend the dried shrimps especially when you bite on the dried shrimps, hehe.
For the mixture, mix adequate amount of flour and water until you get a ‘not so thick and not so watery’ mixture
It still depends on the amount of cooked barley you have. You can add a bit of salt to the mixture if you want. However, if you use a lot of dried shrimps, you don’t have to add salt because the dried shrimps are salty. After getting the mixture ready, you can mix in the cooked barley. Be careful not to add too much cooked barley (the one in the picture is too much :p) because you need more of the flour mixture to hold the cooked barley together when you pan fry them. I added too much cooked barley to the mixture and my ‘barley pancake’ broke apart when I pan fried them. I mixed a new bowl of flour and water to add in but didn’t take picture of it. Add in the finely chopped corianders or spring onions to the mixture too, and start mixing them well. You can see that I didn’t add my chopped corianders into the mixture because I simply didn’t have enough corianders for that big bowl of cooked barley, haha! So, I only topped the chopped corianders when pan frying them.
Next, heat your frying pan with some oil and put in a scoop of the barley mixture to pan fry it. When you see the ‘barley pancake’ is set, you can turn it over to pan fry the other side. Pan fry each side for a few minutes until you see they turn a bit brown. It’s basically the same way as how you make a pancake.
You can enjoy your ‘barley pancakes’ with chilli sauce just like when you eat the ‘oh kuih’ (yam kuih)
