Banana Cake

Hubby wanted to bake, so last Sunday, we baked banana cake. Or I should say, he baked banana cake since he did most of the job this time. While I was washing and cutting the chicken breasts and other ingredients we bought from the market in the morning to keep in the fridge for this week’s bentos, hubby prepared the ingredients for the banana cake.

Ingredients

For the sugar, the original recipe we got from the internet was 150g sugar. So you can use 150g of sugar if you’re using normal sugar. We used fructose. Fructose is sweeter than the normal sugar. We cut a bit of the banana to try if they’re sweet but they aren’t very sweet so we used 120g fructose. If your bananas are very sweet and you don’t want your cake to be too sweet, you can adjust the amount of sugar.

First, mix the butter and sugar in the mixer until they become white.

Then, slowly add in the beaten eggs, 1/3 at a time and mix well.

After that, put in the mashed bananas and walnuts and mix with a spatula.

Lastly, sieve in half of the self-raising flour and baking powder and fold them well before you sieve in the other half, fold them well but don’t overfold.

Place baking paper on your cake tin and pour in your banana cake mixture. Smooth the surface with a spatula and bake the banana cake in preheated oven(160 degree celsius) for 30 minutes. Check your banana cake with a cake tester or by inserting a skewer into the cake. If the cake tester comes out clean, the banana cake is done.

After 30 minutes of baking, we got our banana cake :) Let it cool and cut. But we couldn’t wait to try, we cut when it’s still hot, we did wait a while for it to cool though. Really just waited a while =P

Two of us finished 1/3 of the cake and we could eat more! But had to control. What makes it so nice when you eat is the walnuts! The cake is a bit too moist, I think we used too much bananas! You can use one cup of bananas if you wanna use this recipe :) We want to use this much bananas so we’re going to try baking this banana cake again with 200g self-rasing flour. Will see how it turns out.

This morning, hubby stole two pieces of banana cakes even after he has finished the breakfast I made him. He really likes the banana cakes :) I’ve packed these banana cakes into his afternoon bento today. He gets to enjoy them during tea time later :D
